Black Bean and Corn Salsa with Feta

This salsa is perfect for parties and get-togethers, an afternoon snack, or my husband thinks it would be good over grilled salmon.  However you choose to eat it, this is a great addition to your recipe box!  Enjoy!

You’ll need:

1 can black beans, drained and rinsed
1 can corn (I prefer white), drained
1 orange pepper, chopped
1 red pepper, chopped
1 yellow pepper, chopped
1 tub of crumbled feta cheese
1 bunch of green onions, chopped
1/3 cup olive oil
1/3 cup apple cider vinegar
1/3 cup sugar
Garlic powder to taste


Directions:
Combine beans, corn, peppers, and onion in a medium mixing bowl.
In a small mixing bowl, combine vinegar, olive oil, sugar, and garlic powder.  Mix well. 
Pour dressing over the bean/corn mixture and stir well.
Toss in the feta cheese.
Chill for a minimum of 2 hours before serving.  (Overnight is best to get the best flavor)
Serve with tortilla chips.
